Dosa Podi



Most of the time while making dosa we face a situation such that the batter will be more for the current meal but it will be too less for another separate meal. This happens very often especially when it comes to instant dosais. This dish is a saviour for utilizing those batter. It comes sin so handy while making easy evening snack too! Sharing my MILs recipe hope you find it usefull too :).

Dosai Podi

Ingredients

Left over dosa
4
Onion
1 medium sized
2 Tsp
To Temper
Gingelly Oil
2 Tsp
Mustard
1/2 Tsp
Urad dal
1/2 Tsp
Channa dal
1/2 Tsp
Curry Leaves
4-5
Asafetida
A generous pinch

Preparation

     1.     Chop the onion finely. Crumble the dosas as shown.



Method
      
    1.     Add 1 Tsp oil to the pan and once it becomes hot temper with the ingredients mentioned. Add the chopped onions and sauté till they become translucent.   


     2.     Add the crumbled dosa along with Idly podi and mix everything well. Add another Tsp oil at the end and saute for 2-3 mins.


     3.     Enjoy hot along with coffee/tea or few spoon curd!!

Notes

    ·         The more cool the dosas the easier to crumble.I usually make them in morning and enjoy as tea time snack.
      ·         You can make the dosas at night and have as breakfast too.
      ·         You can add grated carrot too if you like that taste.
     ·         Even instant dosas like godhuma dosa, rava dosa, adai etc tastes great this way.

Basic Eggless Cookies



Many of us love to combine a good biscuit with tea. I personally love the fresh, aromatic home made cookies. I still din't get the skill to make them with smooth finish like store bought ones :(. But I am just a beginner in baking and I stick to egg-less baking. Will surely update if I come to know the secret of making smooth cookies!!. Since this is my first post on baking I choose to start with this basic cookies. Hope you all like it :).

Basic Cookies

Cuisine: Indian
Category: Snacks
Difficulty level: Easy
Prep Time: 10 mins
Cook time: 30 mins
Servings: 20 cookies

Ingredients

All purpose flour
1 cup heaped
Butter
1/3 cup
Sugar
1/2 cup
Baking Powder
1/2 Tsp
Baking soda
1 Tsp
Salt
A tiny pinch
Vanilla Essence
1 Tsp

Preparation

     1.     Preheat the oven at 180áµ’C for 10 minutes.     

Method
      
    1.     Assemble all the ingredients. Butter should be at room temperature. In a bowl mix butter and sugar till the mix becomes creamy. You can do it with electric mixer or manually using a whisk as shown.



    2.     Sieve the flour, baking powder, baking soda and salt to the butter+sugar mix. Add vanilla essence and mix everything to get a smooth dough. No need to add water.


    3.     Make small balls out of the dough, flatten them slightly and arrange in butter paper as shown. Once oven hits 180áµ’C , place the cookies and bake them for around 12 minutes. Take out and cool down.


    4.     Once the cookies reach room temperature store them in airtight container and enjoy with tea!!  
                                       
Notes
      ·         Do not add water for the dough. If it's too sticky you can add few spoons of flour.
      ·         Instead of maida we can use self raising flour or a combo of wheat flour and maida in 1:1 ratio (1/2 cup atta+1/2 cup maida).
     ·         If you like the cookies less sweet the reduce sugar measure to 1/3 cup. The measure depends on quality of sugar also hence after one or two trials you can fix the measure as per your preferrance.
      ·         Make small patties and place them with enough space in between. The cookies tend to expand while baking.
     ·         They may look soft when hot but after cooling down the cookies will surely become crisp.

Corn Cheese Toast


In our home we usually make sandwiches are some sweet toast with bread most of the time ! I tried this toast maily to use the frozen corn I purchased earlier. But I was really impressed with the outcome. This is very easy and delicious toast and will be a sure hit among kids!! If you use frozen corn like me the process becomes super easy. Very filling breakfast or a delicious tea time snack which you can make on some weekend or in case of unexpected guests!! Lets see how to make this "Corn cheese toast" -:).

Corn Cheese Toast

Ingredients

Bread slices
10
Butter
3 tblsp
Cheese
1/3 cup
Corn kernels
1/4 Cup
Capsicum (optional)
1/2
Chilli Flakes
1 Tsp
Italian seasoning
1 Tsp

Preparation

     1.     Preheat oven at 180áµ’ C for 10 mins.
   2.     Grate the cheese. Boil the corn and separate the kernels (I used frozen corn). Chop the capsicum finely.   



Method
      
    1.     Mix the veggies , cheese along with chilli flakes and seasoning.  


    2.     Apply little butter on the bread and top up with the cheese veg mix.


    3.     If you are cooking on tawa cover with a lid and cook in low flame for few minutes.


    4.     Bake at 180áµ’ C for 3 mins.


    5.     Toast made in both ways ! Just for comparison. Serve hot with ketchup!!


Notes
         ·         Oven makes the process more easy as we can make upto 5 toast at same time. Also both sides will be evenly toasted.
         ·         In tawa you can make as sendwich too.
     ·         You can replace "capsicum+chili flakes" with finely chopped green chilies.



 Tastes great as such too :)

Pav bhaji



Pav bhaji is another dish which i grew fond of after marriage. Though I am a huge fan of chat items usually before marriage I opt for pani puri (Oh my god I just love them) or samosa chat. The ones we used to get in our NTPC township was way too delicious. However in chennai restaurants the chat quantity was bit too much and they were not up to my expectations. My hubby loves Pav bhaji so he was the one who introduced it to me. This is not very tricky dish but it may take bit time especially if you make in large quantities. After few trial and errors I found this recipe perfect for our taste buds!! Posting the same with some minor modifications. 

PaV Bhaji

Ingredients

Potato
3 medium sized
Capsicum
1
Tomato
2
Onion
2
Ginger Garlic Paste
2 tsp
Peas
1 fistfull
Salt
1 Tsp
Turmeric
1/4 Tsp
Chilli Powder
1 Tsp
Pav Bhaji Masala
1 Tsp + 1 Tsp
Butter
3 Tbsp
Lemon
1
Corriander leaves
1 spring
Pav Buns

Preparation
      
    1.     Boil the potatoes. Peel its skin and mash them nicely. Chop tomatoes, onion, capsicum finely.



Method
   1.     In pan add 1 Tbsp butter and once it melts add capsicum, green peas and cook them till soft. Add some water if needed. Add tomatoes, salt,turmeric, chilli powder and ginger garlic paste.


    2.     Add 1/2 cup water and cook the vegetables well. Using potato masher mash them to get homogeneous mixture. Add potatoes along with 1/2 cup water and keep mashing.
    3.     Finally add 1 Tsp pav bhaji masala, some more chilli powder, dhania, some chopped onions and butter. Mix well and bhaji is ready.


    4.     Cut the pav bun in middle. In tawa add little butter and once it melts, add a pinch of Pav bhaji masala and spread it to the bun. Flip and toast till both sides becomes golden brown.


     5.     Squeeze some lemon juice while serving.Enjoy on a rainy evening!!


Notes
      ·         My hubby don't like adding carrot and cauliflower hence we skip it.All vegetables should be cooked very well. Mashing is the key part in this dish.
       ·         You can boil capsicum and other vegetables also while cooking potatoes.
       ·         I used kashmiri red chili to get red shade. You can add some food colour too but it's not mandatory.
       ·         Adding pav masala to bun gives nice taste and highly recommended.  
      ·         You can make the bhaji previous day and refrigerate it. Reheat next day and add dhania, onions, butter and lemon before serving.
      ·         Do not compromise with butter. In shops they add even more amount. This is very filling snack hence keep dinner very simple. We used to have buttermilk rice (mor sadham).
