Aviyal - Mixed vegetable stew



Aviyal is a very simple and healthy dish served in most of brahmin marriages and prepared at home for many occasions. Tastes great with sambhar and adai. My mom makes it in a diluted form like aviyal kuzhambu which can be mixed with rice along with little ghee and had as such. When I was kid I use to love it so much that I even drink that gravy alone 😋. However after growing up I started liking the thicker version served in marriages too!! But I rarely make aviyal here since it always become more volume for two of us. One of my close friend in IITM is a malayali and he said aviyal is his favorite too (Obviously !!). Thrilled to post my version and waiting fingers crossed to get feed back from the guy who belong to land of authentic aviyals 😋.

Ingredients

White Pumpkin
1 big lemon sized ball
Brinjal
2 small sized
Drumstick
1/2
Potato
1 small sized
Broad beans
3-4
Carrot
1/2
Taro root
2
Rock salt
1 teaspoon flat
Turmeric
A small pinch
Curd
2 table spoon
Coconut oil
3 teaspoon
Curry leaves
1 spring
To Grind
Grated coconut
1/3 cup tightly packed
Green chili
2-3
Jeera
1/2 teaspoon

Preparation

1.      Chop the vegetables finely and assemble all the ingredients. Boil taro root separately and peel the skin.



Method

     1.      Boil the vegetables by adding turmeric, salt and 1 cup water.


     2.      Grind coocnut, jeera and chilli to a smooth but thick paste.
    3.      Once the vegetables get cooked and become tender add the paste along with curd and stir for few minutes in low flame. Add boiled taro root at this stage.


    4.      Finally add coconut and oil and garnish with curry leaves.


Notes
     ·         The curd should not be sour and preferably thick. I used milky mist curd.
    ·         Choice of vegetables is purely according to your taste and availability. Snake gaurd, peas, beans, capsicum, chow chow, Raw banana, Elephant Yam can also be added.
     ·         Fresh coconut ensures best taste.
     ·         We generally don't temper aviyal.If needed you can temper as per ur taste using coconut oil.
     ·         For a diluted version you can add lesser coconut and some more water!!
